I have been cooking since I was a child and always felt that I could tackle about any dish without feeling nervous, except one…. The seemingly simple Chocolate Chip Cookie. I think everyone has some sort of adaptation of this classic they made growing up and everyone’s moms is the best, except for mine. When I was making these cookies with my mother we always followed the basic recipe on the back of the bag of chips an they were usually pretty good, but pretty good was never enough for me. I started trying to tweak the recipe by adding more chips or nuts and other combinations of dry ingredients and never really liked the outcome, they usually turned out really flat and crunchy which was the total opposite than what I was looking for. I even lied to my now husband Tony when we started dating by telling him the little frozen dough balls I got from Costco was my own recipe and he believed me for a few years and even bragged to his friends about how I made “the best” until he saw the box in my freezer! Tony hasn’t let me live that one down yet and that was 10 years ago! Since then he has watched me make many dozens of failed attempts at the CCC and while not satisfied he gladly eats my evidence of failure with a glass of milk.

The American staple comes in many shapes and sizes and taste varies greatly from person to person. Some like flat and crisp with milk chocolate chips and others (like my husband and I) like a thick soft cookie with a dark chocolaty taste. After many times trying and failing I finally searched the internet for an hour in hopes I could find the perfect CCC in our opinion.

On a rainy Oregon Sunday we decided to try our hand at a new recipe that was supposed to be a copy of a famous cookie bakery. So we tried this CCC recipe that claimed to be the ultimate and i think by George we got it! You know when you’ve got it right because at first taste you find yourself closing your eyes and chewing slowly. We did alter the recipe the first time which I know is frowned upon in the culinary world but luckily it was well worth the risk! After trying one more batch I will post this new recipe for all to try and hopefully it will bring you a little moment of heaven and a new recipe to brag about to your friends!
